The Cheese Man was a bespectacled and enigmatic man with a passion for cheese slices. He showed up in each of the Scoobies dreams in 4.22 Restless for no reason other than to confuse Buffy fans as to his meaning. He also appeared very briefly in 7.16 Storyteller during the dream scene in Mexico.

Hi, I remember that guy, he’s dorcishly funny. I like it when he sez “this cheese can not help you” and “i can wear the cheese but the cheese cant wear me!”
See you all Buffy fans (such as me) later!

I don’t think the Cheese Man was meant to confuse the Buffy fans so much as he was meant to just be that one really meaningless and random thing that makes dreams so characteristically confusing and ridiculous. I seem to remember Joss saying something to that effect.

Yeah he said that on the Restless commentary. is was just there as a random thing that dreams have but thats what “confusing Buffy Fans” meant cos we all thought it was a prophecy or summat like that. it did in my head.

It’s a dream sequence, when Jonathan and Andrew are nightmaring. Slightly before “holy cats, that was terrifying.” You can find it in the transcript at buffyworld.

His appearance in Storyteller is miniscule, you have to watch really hard to spot him! I think I almost missed him the first time watching it and I had one of those “what the hell, did I really just see that?!” moments. It was confuddling.
I loved the Cheese Guy though, he was so inexplicably ridiculous in Restless. I liked the fact the one dream aspect that the Scoobies shared made absolutely no sense at all. Buffy’s line “at least you all didn’t dream about that guy with the cheese…don’t know where the hell that came from” is great, and Willow’s, Xander’s and Giles’ expressions are hilarious!

Cheese is sort of like the Shrimp thing. They keep refering to a world without shrimp, or full of shrip or something along those lines in Buffy and Angel. Cheese is mensioned a few times in season 4, In the episode

First time I saw Restless, I really thought the CheeseMan had a real meaning or an important reason for being there, much like probably everyone else. And when that scene above played out, I seriously thought everyone was looking at one another weirdly because they knew the CheeseMan had only appeared in all their dreams because of Buffy.
Perhaps because Buffy’s the Slayer, so an insignificant aspect of her character played out in their dreams, and, as Esual pointed out, it was the reference to her liking cheese.
I know there are hundreds of essays/theories on the CheeseMan, and I find it interesting how the one thing Joss supposedly chose to be in the episode as having absolutely no meaning, when the episode’s full of foreshadows and significant references, had people pondering thoroughly. And it seems so irrelevant that he’d do that… and, at the same time, it doesn’t. Only Joss would’ve thought in such a detail as of putting a detailed individual that had no meaning whatsoever; resulting in him rather having a big meaning, if ya think about it.
