In the original script for the Angel episode 1.01 City of, Angel was going to taste Tina’s blood after her death, but the scene was cut. The intention was to show that Angel is really on the edge, but it was decided that it was enough that he wasn’t able to save Tina.
In their commentary for the season one DVD, Joss Whedon and David Greenwalt mention that the original idea for the episode was to have Angel tasting the blood of a victim he tried to help.
